Spring Recipe
BASIL AND ARUGULA PESTO
This dish has a powerful taste due to the arugula. It is delicious to accompany a salad of sprouts and flowers.
Ingredients
basil leaves
5 leaves of wild arugula
1 tablespoon of pine nuts
1 garlic clove
extra virgin olive oil
20 gr. of grated parmesan
salt
Instructions
Wash the basil leaves and arugula and dry them well.
In a mortar, chop the garlic, add the basil and arugula. Add a little virgin olive oil and mix them.
Add the pine nuts and Parmesan cheese and then add the oil little by little until a creamy consistency is achieved.
