Spring Recipe

BASIL AND ARUGULA PESTO


This dish has a powerful taste due to the arugula. It is delicious to accompany a salad of sprouts and flowers.

Ingredients


  • basil leaves
  • 5 leaves of wild arugula
  • 1 tablespoon of pine nuts
  • 1 garlic clove
  • extra virgin olive oil
  • 20 gr. of grated parmesan
  • salt


Instructions


  1. Wash the basil leaves and arugula and dry them well.
  2. In a mortar, chop the garlic, add the basil and arugula. Add a little virgin olive oil and mix them.
  3. Add the pine nuts and Parmesan cheese and then add the oil little by little until a creamy consistency is achieved.
